Makes 18 fingers (6 sandwiches)
1/2 a roast chicken (cooled and finely chopped)
1 celery stick (finely chopped)
1/4 cup walnuts (chopped)
1/8 cup sultanas (chopped)
1/2 green apple
Juice of half a lemon
150g of Roquefort cheese or mild blue cheese (crumbled)
Good quality egg mayo – to taste (enough to compine ingredients above without becoming too rich)
Salt & Pepper (to taste)
Fresh bread slices (or rolls)
METHOD:
Combine in a bowl. Add filling to sandwiches and cut into ribbon fingers for easy eating.

CFC’s Tips:
Although this is a very loosely based ‘Waldorf’ salad, it is simple to prepare. The filling can be prepared the night before and refrigerated in a sealed container until ready for use.
As an alternative, try the filling served in the savory tartlet cases that can be found in supermarkets.
