Prawn and Pineapple Skewers

Serves 4

INGREDIENTS

1kg Green Prawns (peeled, de-veined with tails in tact)
500g Fresh Pineapple segments (peeled, cored and cleaned)
¼ cup honey
2 tablespoons soy sauce or kecap manis (sweet soy sauce)
2 tablespoons chilli and garlic sauce
1 lemon
1 teaspoon butter
1 tablespoon olive oil
Bamboo Skewers

METHOD

Soak the skewers in water for 30 mins so they are saturated and do not burn during the cooking process.

Thread prawns and pineapple segments onto the skewers.  Lie flat in a shallow dish.

Combine honey, soy, butter, oil and chilli sauce and pour over prawns and pineapple.  Allow to marinate for at least 30 mins.

Heat and oil pan, grill or BBQ to a high heat and cook skewers for 3-4 mins.  Ensure they are turned frequently.  Continue to baste with marinate whilst cooking.

Serve with lemon wedges, salad and crusty bread.
