INGREDIENTS:
1 good sized fish (any edible variety); or enough for 500gm fillet per person
lemon pepper seasoning
500gm diced bacon
2 large finely chopped onions
2 cups breadcrumbs
butter
METHOD:
Gut and scale fish.
Combine breadcrumbs, onion, diced bacon,and a good amount of lemon pepper, rubbing in butter until mixture holds together.
Stuff fish with breadcrumb mixture.
Wrap in aluminium foil and bake 45 minutes at 180 degrees.
Can also be cooked over a campfire.
Drizzle with fresh lemon juice and serve with al-dente penne pasta and white sauce.
