INGREDIENTS:
1 bottle beer (330 – 375ml) choose a good quality beer and you will be rewarded with better flavour!
1 cup mango chutney (other fruit chutneys work well too)
1/2 cup brown sugar
1/3 cup wholegrain mustard (for a bit of heat, add a tablespoon of Hot English Mustard)
2 tablespoons of white wine vinegar (apple cider vinegar is also good)
2 teaspoons of mixed spice
Salt and pepper to taste
METHOD:
1. Preheat oven to 160°C
2. Pour beer over ham and cover with foil. Roast for 2 hours, basting every 20 mins.
3. Mix all the other ingredients together in a bowl and allow the flavours to develop together for 2 hours whilst the ham is in the oven.
4. Remove ham (leave oven on) lift skin off ham and trim the fat back to about 2.5cm then score the fat diagonally to make the traditional diamond shapes.
5. Brush 1/3 of the mixture over and bake for 20mins. Brush another 1/3 and bake for 20 mins and then the final 1/3 for 20 mins.
