I thought I’d share the “cooking my catch” technique….
When onboard I have only a little hot plate. Not much room for oven or frying etc. My recipe will include my favourite fish to catch TREVALLY
INGREDIENTS:
A fish fillet (I prefer Trevally for this one but my partner prefers Cod – depends if he can catch one 😉
Ginger
Lemon
Parsley
Salt & Pepper
Butter
METHOD:
Skin and bone the fish. Leaving a thickish fillet.
Place the fillet in the middle of a piece of aluminium foil
Butter the fish
Place on top a couple of pieces of ginger, (not too many)
Sprinkle dried parsley on top (you can use fresh if you have it)
Drizzle lightly with lemon juice
Sprinkle with salt and pepper
Wrap the fish in the foil so it is completely covered with no air holes.
Place the fish ontop of the hotplate or heat surface (No pot, pan or plate required)
Turn the fish every 2minutes. Check after 4minutes then continue to turn until the fish is white all the way through.
THEN ENJOY!!
I love fish this way and because we don’t have a large boat where we can cook food properly. The only thing I have to remember is the butter. I keep some dried herbs and lemon juice in the boat and always have aluminium foil. It is extremely practical and ready in only a couple of minutes. All I rely on is the fish being caught!
